Also called “cinnamon-sugar crisps,” I’m thinking it was Martha Stewart who first introduced me to these little delectables some years ago.
Crispy, sweet and cinnamon-y, these are a perfect treat when you want something simple that isn’t filling. And they take just minutes to make.
All you need is a bag of tortillas, a little butter and some cinnamon-sugar. I mix the latter and keep it on hand in a old Parmesan cheese container so it’s convenient to sprinkle on buttered toast, baked oatmeal, or these.

Place wedges on baking sheet. (I use and re-use parchment paper to keep the stray sugar crystals from melting onto my cookie sheet--helps with cleanup!
I bake at 400 degrees for around 5 minutes. My cookies sheets happen to be insulated, so if yours aren’t, your bunuelos will brown more quickly. Also, tortillas come in various thicknesses, so keep that in mind. (I normally use the Mission brand.) Bake until they are lightly browned around the edges, however long that takes.
Serving Mexican? A bowl full of these to share would be a great, light dessert.

This reminds me of something we had a couple of weeks ago. You begin the same, but instead of cutting them into pieces, we put them in muffin pans so they made a little bowl. We baked them for about 8 minutes or so then filled them with a couple of scoops of ice cream. We topped them with a fruit salsa made of chopped pineapple, mango, kiwi and strawberries. Very yummy!

We do these at my house often. They also taste very much like churros but without all the work.

I’ve never had (or made) churros. You’re right—the bunuelos are really easy.
